Dry Brined Chicken on the Flip Flop Grill!
It's a beautiful day in the PharmCook world! The skies are blue. The temperatures are fabulous. The leaves are starting to change. And that can only mean one thing: it's time to grill!
Today, we're breaking out the flip flop grill to cook up some chicken thighs. But we're not just tossing the thighs onto the grill and calling it good (although, with the flip flop grill, you can and the results are amazing!). Wait, dry brine chicken? You mean, it's not just for steaks?!?
Yes! Dry brining chicken works beautifully! It not only helps to dry the outside of the chicken, which results in amazing chicken skin crispiness. It also helps season the chicken and increase the juiciness of the meat. It is like some sort of magic wizardry. All you need is a little time and a little salt (or, in this case, some rosemary salt) to turn something yummy into something amazing!
After dry brining, the only thing left to do is grill. And, the flip flop grill makes this super easy and super flavorful. The easy part is easy to see. You just spin the grill grates to get even cooking coverage. The super flavorful part is a bit less easy to see on video. It's a result of the combination of:
a. cooking over charcoal (which makes everything better);
b. allowing the fat to drop onto the coals. That dripping fat results in a little flavor boost. You get some additional heat, some additional smoke, and some additional flavor from the chicken fat. And, because the chicken is elevated over the coals, that means it's less likely to result in burning/charring the chicken. The result is fabulous!

But, you don't need to use the flip flop grill to get really good chicken. Just dry brine your chicken and cook over a charcoal or even gas grill. The results will be tasty...just maybe not quite as amazing as what you might get from the Flip Flop cooker.
