The Health Benefits of Chives

Herbed Butter with Chives & Shallots
Ingredients
1 cup (2 sticks) unsalted butter, softened to room temperature
3 tablespoons fresh chives, finely chopped
2 tablespoons shallot, very finely minced (raw or lightly sautéed if you prefer a milder flavor)
1 tablespoon fresh parsley (optional, for extra freshness)
1 teaspoon lemon zest
½ teaspoon sea salt (adjust to taste)
¼ teaspoon black pepper
Instructions
In a medium bowl, mash the softened butter with a fork or use a hand mixer until smooth and creamy.
Add the chives, shallots, parsley, lemon zest, salt, and pepper. Mix until everything is evenly distributed.
Taste and adjust seasoning if needed.
Spoon the mixture onto a piece of parchment or plastic wrap. Roll it into a log and twist the ends to seal.
Refrigerate for at least 1 hour to firm up. Slice into rounds as needed.
How to Use
Spread on warm crusty bread or biscuits
Melt over steamed vegetables, baked potatoes, or corn on the cob
Add a pat to grilled chicken, steak, or fish for an instant flavor boost
