Pizza Pasta Salad
Ingredients
250g fusilli pasta
1 cup pizza sauce
4 tablespoons olive oil
2 teaspoons oregano
2 teaspoons garlic powder
1 teaspoon chilli flakes optional
Salt to taste
Black pepper to taste
Juice of 1 lemon
1 cup cherry tomatoes halved
1 cup mozzarella balls
1 cup sliced black or green olives
1 red onion thinly sliced
½ green pepper chopped
150g mushrooms
Handful of fresh basil leaves

Step 1
Cook fusilli pasta in salted boiling water until al dente. Drain and set aside.
Step 2
Drizzle olive oil into a pan. Add mushrooms with salt, pepper and oregano. Stir fry until golden. Allow to cool.
Step 3
In a small bowl whisk together pizza sauce, olive oil, oregano, garlic powder, chilli flakes, salt, black pepper and lemon juice until smooth. This will form the dressing.
Step 4
In a large bowl add pasta, cherry tomatoes, mozzarella balls, olives, red onion, green pepper, mushrooms and basil leaves.
Step 5
Pour the dressing over and toss until everything is well coated.
Step 6
Chill in the fridge for at least 30 minutes before serving for the flavours to develop.
