Indomie in Creamy Curry Peanut Sauce 🔥

Ingredients:

Veggies:
1 cup red and green bell pepper, thinly sliced
1 red onion, thinly sliced
1 tbsp oil
A pinch of salt

Sauce:
1 tbsp oil
6 garlic cloves, minced
1 tsp gochugaru (Korean chili flakes)
1 tsp curry powder
2 tbsp peanut butter
1 can heavy cream or coconut milk
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp oyster sauce
1 tsp gochujang (Korean chili paste)
½ cup noodle water
Indomie seasoning packets (from 2 packs)

2 packs Indomie (any flavor)

Boil Indomie noodles for 3 minutes. Rinse with cold water and set aside.

In a pan, heat 1 tbsp oil. Add sliced bell peppers and red onion with a pinch of salt. Sauté until slightly soft. Remove and set aside.

In the same pan, add 1 tbsp oil. Sauté minced garlic until fragrant. Add curry powder and gochugaru, stir briefly.
Mix in peanut butter, then pour in the cream or coconut milk. Stir until smooth.

Add soy sauce, rice vinegar, oyster sauce, gochujang, and reserved noodle water. Add the Indomie seasoning packets. Stir well and let it simmer for a few minutes.

Return sautéed veggies to the pan. Add the noodles. Toss everything together until well coated and heated through.
