These little melt in your mouth cakes can definitely change up any mood.
Cake:
3/4 cup butter or Rama @RamaSouthAfrica
11/2 cup sugar
3 tbsp oil
1 tosp vanilla essence
4 eggs
21/2 cups flour
21/2 tsp baking powder
1/2 tsp salt
11/4 cups milk
• Beat together butter, sugar, oil and vanilla until light and fluffy.
• Add in eggs one at a time whisking between each addition.
• In a separate bowl sift together flour, baking powder and salt.
• Add half the dry inaredients to the butter
•Then add in all the milk and the rest of the dry ingredients.
• Mix well until fully incorporated.
•Pour into a lined baking dish and bake @
180°C
for 35-40min checking at the 30min mark.
• Remove from oven and allow to cool.
Syrup:
11/2 cups sugar
1 cup water
3 tosp cocoa powder
1 tbsp butter
• Add all ingredients to a pot and allow to come to a boil.
•Once boiling switch stove off and allow mixture to cool before dipping cakes in.
(this mixture can be made before or while cake is in the oven baking)
To assemble:
• Cut cake into squares.
• Dip each square into the cocoa mixture (don't leave it to soak)
•Roll in desiccated coconut and set on wire wrack to dry.
• Can be served as is or add cream and chocolate ganache to the top.
