CHICKEN WHITE BEANS AND KALE
Chicken with White Beans and Kale
Ingredients
1 3/4 lbs boneless chicken thighs
1 onion, diced
4 garlic cloves, minced
1 teaspoon dried oregano
2 1/2 cups chicken broth
2 cans white beans, drained
1 bunch kale, stems removed, and chopped
Directions
Slice chicken thighs in half and season both side sides well with salt and pepper.
Heat oil in a pan over medium high heat. Sear chicken smooth side down for 4 minutes. Flip chicken over and cook for another 3 minutes. Remove and set aside.
Reduce heat to medium, add onions and garlic, and sauté for 3 minutes.
Stir in oregano.
Add chicken broth and white beans and season with salt and pepper.
Return chicken back to the pan and bring to a boil. Lower heat to medium low, cover and cook for 20 minutes.
Remove chicken and stir in kale. Cover cook for 2 minutes. Return chicken back to the pan and remove from heat.
