How To Make New Jersey Crumb Buns

Cake Base:
2¼ cups (11¼ oz) all-purpose flour
¾ cup milk
¼ cup (1¾ oz) granulated sugar
1 large egg
2¼ teaspoons instant or rapid-rise yeast
¾ teaspoon salt
6 tablespoons unsalted butter, softened and cut into pieces
Crumb Topping:
18 tablespoons (2¼ sticks) unsalted butter, melted
¾ cup (5¼ oz) granulated sugar
¾ cup (5¼ oz) packed brown sugar
1½ teaspoons ground cinnamon
½ teaspoon salt
4 cups (16 oz) cake flour

Confectioner's sugar for dusting.
