Friends, i know it's easy to grab a can of enchilada sauce from the store. I've used it in a lot of recipes. But if you want that truly special homemade flavor, you need to make this sauce. This is not like that runny out-of-the-can sauce, this is thick and hearty.

☆Recipe☆

-Sauce-
•12 Guajillo Chili's, dried •3 tsp Garlic, minced
•3 (8 Oz) Cans Tomatoe Sauce •2 tsp Ancho Chili Powder
•1½ tsp Chili Powder •1 tsp Cumin •⅓ Cup Chicken Broth
•½ Onion

-Meat Mixture-
•1 LBS Ground Beef •½ Onion, chopped •Salt & Pepper
•1 (4 Oz) can Green Hatch Chili's

-Toppings-
•3 cups Cheddar Cheese, grated •Corn or Flour Tortillas
•1 Cup Mozzarella Cheese, grated

*Good substitutes for ancho chili include guajillo peppers, mulato peppers, and chipotle powder. For a milder option, smoked paprika can also work well.
