Delicious Pineapple Cake Recipe

Need a new idea for a Cake, try this delicious Pineapple Cake topped with a Glaze and chopped Walnuts for a little crunch.

Pineapple Cake
Ingredients:
2 cups Flour
2 Eggs, roomtemp
1/2 cup Butter, soft
1-1/4 cups Sugar
1-1/2 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Nutmeg
1/2 tsp Salt
1 tsp Vanilla
2 tbsp Sour Cream
1-1/2 cups Pineapple, crushed
1 tbsp Pineapple Juice

Glaze
Ingredients:
1 cup Powdered Sugar, sifted
2-4 tsp Pineapple Juice (more if needed)

1/4 cup Walnuts, chopped (optional)

Line 9" Springform with Parchment Paper and butter.
Preheat Oven 350°F.
Combine Flour, Salt, Nutmeg, Baking Powder & Baking Soda.
Whisk well, set aside.
Cream together Butter and Sugar.
Add Eggs, one at a time.
Vanilla, Pineapple Juice & Sour Cream.
Incorporate Flour Mixture in batches.
Fold in Pineapples.
Fill prepared Springform with Batter.
Bake 50-55 Minutes or until tester comes out clean.
Rest 10-15 Minutes before removing Springform & Parchment Paper.
Cool completely on Wire Rack.
Combine Powdered Sugar and Pineapple Juice (enough Juice to the liking for thickness of Glaze) whisk well.
Top cold Cake with Glaze.
Sprinkle with Walnuts.
Let the Glaze set.
