Day 5 - Caramelised Onions

Ingredients
1 ½ Kgs Onions
250g Lard or Dripping/Tallow or Ghee

Method
Peel all onions
Slice onions
Cut up lard and add to pot and melt slowly
Add in onions and again keep on a low heat.
Place a lid on top and check every 5 minutes and stir carefully.
Once they are halfway done turn the heat off
Fill preprepared jars with Onions up to the collar of each jar.
Place lid on reasonably firmly not beyond hand tight.
Place in preboiled pot of water.
Bring back to boil.
Turn down heat to simmer and continue to waterbath for 2 hours with a lid on.
Once done bring out of the pot and leave to sit safely until cool and the lids seal.
I tend to leave mine overnight.
Once room temperature wash jars and dry in case there is any debris outside the jar and label thoroughly.
