Fish paste made from sardines and anchovies.

2️⃣ Processing Facility
Eels sorted by size, put in baskets, then slimed cleaned off. Deboned, then mass cooked.

3️⃣ Sub-kitchen
👨🏻‍🍳 Chef Oguri Shoji (Section Chief/Direct Sales)

🍢 KIMOYAKI (Grilled Liver)
Grill internal organs, dip in sauce, grill again.

♨️ KABAYAKI DON (Grilled Eels with Sauce)
Grill, dip in sauce (sake, sugar, mirin, soy sauce), then grill again. Serve with rice bowl.

🍤 EEL TEMPURA
Battered with dry packaged tempura flour & water. Deep fry.

🧈 UMAKI (Eels Wrapped in Eggs)
Cracked eggs, Dashi (stock made from bonito flakes), sugar, soy sauce. Pan fry with oil.

🔥 SHIRAYAKI
Poke holes on skin to release natural oils. Salt & Sake. Steam then grill bottom.

Cut head and tail, then put in ice water bowl with secret white powder to drain blood. Separate skin & meat. Boil skin. Slice meat.
