Enchilada Recipe:

Add white onions to the enchilada mix and use a rotisserie chicken for the meat. Switch in black beans for pinto beans. I swapped fresh jalapeño and serrano peppers (along with one habanero pepper) instead of canned green peppers. I also added a little salt and pepper plus a small amount of butter while melting the cream cheese.

Green enchilada sauce was used instead of red. Serve with lettuce, sour cream, and guacamole.

Guacamole:
Avocado, tomato, white onion, cilantro, lime juice (from fresh lime), salt, and pepper. Chill before serving.

Refried beans were also served, premade. Chorizo was supposedly mixed in those as well, but it didn't seem like much.

It was all VERY tasty, and I had a lot of fun doing it.
