*INGREDIENTS*
▢ 2 - 3 lbs beef chuck roast, cut in 1.5″ cubes
▢ 2 tsps sea salt or kosher salt
▢ 1 to 2 tsps black pepper, or to taste
▢ 1 tbsp extra virgin olive oil or avocado oil
▢ 2 tbsp unsalted butter
▢ 1 to 2 onions, cut into 1/2″ size
▢ 2 sweet bell peppers, any color I prefer to use 1 red and 1 orange. Cut into ½ inch squares
▢ 2 tomatoes , cut into 1/4 “ size
▢ 5 garlic cloves, finely minced
▢ 1 bay leaf
▢ 1 tsp caraway seeds
▢ 1/4 cup Hungarian-style sweet paprika
▢ 4 cups beef stock or broth
▢ 1 bottle of Campbell's® Concentrated Beef Broth
▢ 1 cup robust dry red wine
▢ 2 carrots, peeled, cut into ½" cubes or cut in an diagonal shape
▢ 2 potatoes , cut into 1/4” cubes
▢ 1 tbsp finely chopped Italian flat leaf parsley , optional garnish
