How to make Delicious Zucchini Potato Cups

These delicious Zucchini Potato Cups are great as a Side Dish, or served at a Brunch.

Zucchini Potato Cups
Ingredients:
1 lg Zucchini
3 med Potatoes
2/3 cup Sweet Peppers, chopped
2/3 cup Red Onion, chopped
1/4 cup Green Onion, chopped
1/2 cup Parmesan Cheese, grated
1/4 tsp Pepper
1/2 tsp Salt
1 tsp Baking Powder
3/4 tsp Italian Seasoning
2 Eggs, beaten
1/2 cup Flour
2-3 Garlic Cloves, minced

Topping:
Sour Cream
Green Onions, chopped

Cut off End from Zucchini, rub together, wipe off bitterness from Zucchini.
Shred Zucchini, use a Cheesecloth or Kitchen Towel to squeeze out Liquid.
Peel Potatoes shred & squeeze out Liquid.
Combine Zucchini, Potatoes, Sweet Peppers, Red Onion, Green Onions, Cheese, Pepper, Salt, Baking Powder, Eggs, Flour & Garlic.
Mix well.
Preheat Oven 375°F
Grease Muffin Tin generously.
Fill equally with Mixture.
Bake 30-35 Minutes or until set.
Rest shortly, top with Sour Cream and sprinkle with Green Onions.
