TUNA AND SHRIMP SUSHI BAKE

Tuna & shrimp sushi bake combines all the different flavors of a sushi roll but made in a casserole. This a great a recipe to make for a gathering or a fun weeknight meal with the family!

Tuna and Shrimp Sushi Bake

Ingredients
1 1/4 lbs cooked shrimp, sliced into chunks
3 5 oz cans solid white albacore tuna, drained
3/4 cup mayo, plus more depending on how much shrimp is used
2 tablespoons soy sauce
2 cups dry sushi rice or Calrose rice
1/4 cup rice vinegar
1 tablespoon + 1 teaspoon sugar
3/4 teaspoon salt
10 tablespoons Furikake rice seasoning, divided
Optional for serving - nori/seaweed sheets, sriracha

Directions
Cook rice according to instructions. Combine rice vinegar, sugar and salt in bowl. Microwave for 30 seconds and stir well. Combine mixture with cooked rice.
In another bowl, combine mayo and soy sauce. Stir in tuna, shrimp and 3 tablespoons of Furikake.
Spread sushi rice onto the bottom of a 9 x 13” baking dish. Sprinkle over 4 tablespoons of Furikake. Spread seafood mixture over the rice and sprinkle over another 3 tablespoons Furikake.
Preheat oven to 350° and bake for 20 minutes.
Serve with nori sheets and sriracha if desired

Note
Can use cooked or uncooked shrimp. I use uncooked shrimp, season with salt and sauté until cooked through in a pan.
