How to make Delicious Avocado Egg Salad

This delicious Avocado Egg Salad can be served on your favorite bread/toast or wrapped in lettuce leaves.

Avocado Egg Salad
Ingredients:
1 ripe Avocado
4 hardboiled Eggs, peeled & chopped
1-2 tbsp Red Onion, chopped
1-1/2 tbsp Parsley, chopped
1 tbsp Jalapeño, chopped (optional)
Zest of a Lemon
2 tsp Lemon Juice
2-3 tbsp Greek Yogurt
Salt to taste
Pepper to taste

Cut Avocado in half, remove the Pit.
Scoop out the Flesh and place in a Dish.
Mash Avocado with Lemon Juice.
Mix in Greek Yogurt (up to 3 tbsp if you like it creamier).
Salt & Pepper to taste and Lemon Zest.
Add Onions, Parsley & Jalapeño (if used)
Gently fold in Eggs.
Ready to serve.
