Leftover Steak Roll-ups on a Blackstone Griddle
Turn your leftovers into something delicious with Taylor's easy steak roll-ups! Packed with sautéed onions, black beans, corn, and cheese, they’re quick to make and perfect for busy weeknights or after-school snacks. Just roll, grill, and top with your favorite garnishes!

Ingredients
About 1 lb leftover steak, chopped and precooked
Avocado oil
1 yellow onion, diced
1 can corn, drained
1 can black beans, drained and rinsed
Taco shell tortillas
1 packet fajita seasoning
1 (8 oz) package shredded Colby Jack cheese
Greek yogurt or sour cream
Prepared pico de gallo
Sliced green onions
1 avocado, sliced
Shredded lettuce
Directions
1. Preheat the griddle on high heat with a bit of avocado oil. Add the chopped steak and diced onions. Sauté until the onions are translucent and the steak is warmed through. Sprinkle half the fajita seasoning over the mixture, along with a splash of oil and water. Mix well.
2. Add the corn and black beans to the griddle and sauté until heated through. Season with the remaining fajita seasoning. Once warmed, combine them with the steak and onions, then transfer the mixture to a bowl.
3. Lay out the tortillas on a flat surface. Layer each one with shredded cheese, followed by the steak mixture. Roll the tortillas tightly so the seam is sealed.
4. Reduce the griddle to medium heat, add a bit more oil, and place the roll-ups seam-side down. Toast until golden brown on both sides, about 2 minutes per side.
5. To serve, place a bed of shredded lettuce on a platter, arrange the roll-ups on top, and garnish with Greek yogurt or sour cream, pico de gallo, green onions, and avocado slices. Serve immediately and enjoy!
