SOUTHWESTERN EGGROLLS

1/2-1 tsp salt

Chicken Filling
11/2 lb chicken breast or thigh
1 1/2 tsp salt
1 tsp black pepper, ground cumin and chili powder
1/2 tsp oregano, garlic powder, onion powder, and paprika
1/2 onion and 2 green onions; finely chopped
1 small red bell pepper; finely chopped
1 jalapeno; finely chopped
1 roma tomato; deseeded and chopped Handful of chopped cilantro
1 minced garlic clove
2-3 chipotle peppers in adobo sauce
1 cup black beans
1 cup southwest corn
