Banana trunk curry is a delicious and nutritious dish popular in many South Asian countries, such as India, Sri Lanka, and Bangladesh. To make banana trunk curry, you will need the following ingredients:

Ingredients:

1 medium-sized banana trunk
1 onion, chopped
2 garlic cloves, minced
1 teaspoon ginger, grated
1 green chili, chopped
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon red chili powder
Salt, to taste
1 cup coconut milk
2 tablespoons oil
Fresh coriander leaves, chopped for garnish
Instructions:

Peel off the outer layers of the banana trunk until you reach the soft and tender part inside. Cut the banana trunk into small pieces and soak them in water for about 15-20 minutes.

In a pan, heat oil over medium heat. Add mustard seeds, and cumin seeds, and let them splutter.

Add chopped onion, garlic, ginger, and green chili. Saute until onions are translucent.

Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a minute.

Drain the soaked banana trunk and add it to the pan. Mix well with the spices.

Add coconut milk and bring the curry to a boil.

Lower the heat and let the curry simmer until the banana trunk is cooked and the flavors are well combined.

Garnish with chopped fresh coriander leaves and serve hot with rice or roti.
