Irish Colcannon:
Ingredients:

2 pounds potatoes, peeled and diced
1 head of cabbage, finely shredded
1/2 cup milk
1/2 cup butter
Salt and pepper to taste
1/2 cup green onions, chopped
Directions:

Boil the potatoes in a pot of salted water until tender.

In a separate pot, cook the cabbage in salted water until tender, then drain and set aside.

Mash the potatoes with milk, butter, salt, and pepper until smooth.

Add the cooked cabbage and chopped green onions to the mashed potatoes, and mix well.

Serve hot, garnished with additional green onions if desired.

Cabbage and Potato Soup:

Ingredients:

1 head of cabbage, chopped
4 potatoes, peeled and chopped
1 onion, chopped
3 cloves garlic, minced
4 cups chicken or vegetable broth
2 tbsp olive oil
Salt and pepper to taste
Optional: chopped fresh parsley for garnish
Directions:

Heat olive oil in a large pot over medium heat.
Add the chopped onion and garlic, and sauté until softened.
Add the chopped cabbage and potatoes to the pot, and pour in the broth.
Bring the mixture to a boil, then reduce heat to a simmer and cook until the vegetables are tender.
Use an immersion blender to puree the soup until smooth.
Season with salt and pepper to taste.
Serve hot, garnished with chopped parsley if desired.
