Astrakhan Region is where the Volga River flows into the Caspian Sea. The mix of fresh and sea water creates a unique ecosystem, perfectly suited to sturgeon. Sean Thomas visits a sturgeon farm to discover how these fish are cultivated. Here, the conditions closely replicate their natural habitat: the fish are fed the same diet as they would find in the wild, and their most prized product – black caviar – is harvested without causing them harm.
Sean learns some of the trade secrets behind this delicacy at a caviar factory. He also discovers what makes caviar uniquely beneficial for health.
But sturgeon have more to offer than just caviar. Even the parts of the fish that are usually thrown away are given a second life here: the scales and bones are used to extract collagen for food supplements, medical products, skincare treatments, and even innovative edible packaging.
