I will list some of the benefits of breaking down the music (breaking it into small parts) and repeating it several times. The brain learns through repetition.
Repetition strengthens muscle and auditory memory.
Chunking down allows the musician to memorize in smaller chunks, making it easier to assimilate. By working on small sections in isolation, the musician can perceive, correct and avoid fixing the error. Each section of the music may require specific skills: dynamics, articulation, rhythmic precision, breathing, etc. Chunking down allows the musician to focus on each of these technical demands separately. Studying in chunks allows the musician to explore nuances: phrasing, expressiveness, musical intention. It allows the musician to emotionally "build" the music from the inside out. Studying in chunks reduces physical and mental fatigue, allowing for greater focus and motor control. Chunking down helps the musician understand the structure (form) of the music: introduction, theme, development, etc. In a live performance, if something unexpected happens, the musician can start over from different points.
