Ingredients & Tools You'll Need:
The beer batter
Fresh Alaska rock fish (caught during the excursion)
Flour 1 cup
Cornstarch 1/2 cup
Rice flour 1/2 cup
Chef Dad’s smoked salt 1 tablespoon
Black pepper 1-2 teaspoon
Onion powder 1-2 teaspoon
Granulated garlic 1-2 teaspoon
Cayenne pepper 1-2 teaspoon
Bearded butcher’s butter blend 1-2 teaspoon
Beer i used 1 can
Vodka 1/8-1/4 cup dont thin out batter to much may add more flour to thicken

The tarter sauce
Onion 1/2
Pickle 2-3
Dill 1 tablespoon
Chives 1/2 tablespoon
Granulated Garlic 1/2 tablespoon
Chef Dad’s smoked salt 1/2 tablespoon
Mayo 1 cup or the thickness you want
Lemon juice 1 teaspoon
Can use greek yogurt as a substitute for mayo but not as good
Pickle juice to thin as needed

The Fry
Beef Tallow (Can use other nutritional high temp cooking oils) 1/4 to 1/2 of your dutch oven
Dutch oven
Sheet pan with rack or paper towels

The fries
Doubles fry once at 325f then at 390f
