What happens when you bring three and a half ounces of gin into a summer pool cocktail? Nothing but awesome. The passion fruit tart with pineapple sweetness paired against lime and sugar gives you a lot of flavor, just enough sweet and just enough tart. However, you bring into this a bit of jumpy fizzy water to bring down some of the tart and strength without compromising the flavor.

Tropical Gin Fizz
• 3 1/2 oz gin (London dry)
• 3/4 oz passion fruit purée
• 3/4 oz fresh lime juice
• 3/4 oz simple syrup
• 1 oz pineapple juice
• 2–3 oz soda water (to top)
