that is what im calling the pasta salad of 2025… its candy, highly spiced, creamy, crunchy, and its SO true. light, clean, and packed with protein.

ingredients (Serves three-4 as a meal, or 4-6 as a side):
For the salad:8 ouncesdry protein pasta
1 ripe mango, diced1 jalapeño, thinly diced (put off seeds for less heat)
half of medium diced crimson onion
two diced persian cucumbers
1 cup romaine lettuce, diced
two tbsp chopped cilantro, two tbsp chopped mint
optionally available: two tbsp chopped roasted pistachios or pine nuts
For the fowl/marinade:
three/4 lb chook (reduce of preference)1 tbsp olive oil1 tsp sumac or chili lime seasoning
half of tsp smoked paprika1/2 tsp garlic powderSalt + pepperJuice of lime
For the dressing:I used SideDish Ranch, approximately 3 servings. you may upload greater lime juice for extra acidity
here is how I made it:
1.Marinate the fowl. Toss hen with olive oil, spices, and lime. Then grill, pan-sear, or air-fry till cooked thru. allow relaxation, then cube.
two.Prep your toppings. dice your mango, slice jalapeño, chop purple onion, cucumber, lettuce, cilantro, and mint
3.prepare dinner the pasta. Boil your pasta. I used high protein lowcarb pasta, dull for four.5 minutes in salted water. Drain + rinse with cold water.
4.assemble. Toss pasta, hen, vegetables, and your dressing. Squeeze in lime juice, add your pine nuts, toss and revel in
this may be remarkable for the 4th, or any backdoor bbq. Its got exquisite flavors, plus extremely good high protein.
