🚨 IMPORTANT NOTE: Why this isn't "Wiener Schnitzel" 🚨
You might hear the term "schnitzel" a lot, but did you know there's a very specific reason why you cannot call chicken schnitzel "Wiener Schnitzel"? Wiener Schnitzel is a legally protected term in Austria and Germany. To be officially called "Wiener Schnitzel," the dish must be made exclusively from veal (specifically, a thin cutlet of veal). If it's made with any other meat, like chicken, pork, or turkey, it's simply a "schnitzel" (e.g., Chicken Schnitzel, Pork Schnitzel, etc.). So, while our chicken schnitzel is absolutely delicious and inspired by the classic technique, it's important to respect the culinary tradition and proper terminology!

*INGREDIENTS*
4 smaller (6 to 8 ounces) boneless skinless chicken breasts
1 cup of all purpose flour. Seasoned it with salt and pepper
2 to 3 large eggs, beaten. Season with salt and pepper.
1 Lemon Zest, freshly grate it directly into the beaten egg mixture.
1 cup of regular breadcrumbs. Season the breadcrumbs with salt and pepper and:
- ½ cup of Panko breadcrumbs
- 1 tsp dried thyme
- 1 tsp dried oregano
1 ½ to 2 cups of Avocado oil for shallow frying or any good cooking oil. Do not use extra virgin oil.
1 lemon, cut into slices to place on the plate
Salt and Pepper to taste
