Ingredients:

1 medium pumpkin, seeded and peeled
4 large eggs
1/2 cup heavy cream
1/2 cup grated parmesan cheese
2 cloves garlic, minced
1/2 teaspoon ground nutmeg
Salt and pepper, to taste
Fresh parsley, chopped for garnish
Instructions:

Preheat the oven to 375°F (190°C). Cut the pumpkin into 1-inch cubes and spread them evenly on a baking sheet. Roast the pumpkin for 20-25 minutes until fork-tender. Remove from the oven and let cool slightly.

In a bowl, whisk together the eggs, heavy cream, parmesan cheese, garlic, nutmeg, salt, and pepper.

In a large skillet over medium heat, add the roasted pumpkin and pour the egg mixture over it.

Cook for 5-7 minutes, stirring occasionally, until the eggs are cooked through and the mixture is slightly golden brown.

Serve hot, garnished with chopped parsley.
