Ingredients:
• 3 eggplants
• 1.5–2 lb ground beef
• 1 green & 1 yellow bell pepper
• 1 jalapeño
• 1 onion
• 2–3 garlic cloves
• ½ tsp paprika
• Salt & pepper
• ½ cup shredded cheese
• Garlic oil & olive oil
• Tomato paste or 2 tomatoes
• Oregano & parsley

Steps:
1. Slice eggplants into petals, salt & rest 15–20 min.
2. Mix beef with chopped onion, garlic, peppers, spices.
3. Stuff eggplants, prep tomato sauce with oil, tomato, oregano.
4. Layer sauce & stuffed eggplants, bake at 350°F for 40 min.
5. Add cheese, bake 10 more min. Serve hot!
