Smoked Cream Cheese on the PitBoss Smoker

This is the absolute BEST appetizer ever!
You can fix it in a smoker or in the oven.
Cream cheese, room temperature
Oil, for a binder
BBQ rub
Pepper jelly, optional
Place cream cheese on a piece of parchment paper or in a heat proof dish. Coat with oil and sprinkle with BBQ dry rub. Make crosshatch cuts in cream cheese, being careful not to slice all of the way through it. I use unflavored dental floss. Place in a 225F (107C) smoker or oven. Let it smoke or bake until the cracks open up or to your desired amount of doneness preference. Top with pepper jelly and serve with crackers or corn chips.
