Classic Potato Salad

2 pounds red potatoes or yellow potatoes
1 stalk celery, diced
1/3 cup sweet pickle relish or ½ cup chopped sweet pickles
2 large hard-cooked eggs, sliced
2 green onions, chopped
6 cooked bacon, crumbled, optional

Dressing
1 cup mayonnaise
2 tablespoons lemon juice
1 teaspoon salt
1/4 teaspoon pepper
1½ teaspoon dry mustard (optional)
•Combine dressing ingredients in a small bowl. Make this first and set aside.

Cook potatoes in boiling water to cover 25 minutes or just until potatoes are tender. Drain well, and cool slightly. Peel and cube potatoes. Combine potatoes and the other ingredients in a large bowl; toss gently. Spoon mayonnaise mixture over potato mixture, tossing gently to combine. Serve warm or chilled.
