Truly an amazingly easy recipe that is bursting in characteristic Indian taste. Try to use authentic Indian spices if available in your region.

Recipe for Indian Butter Chicken (serves 4):

Unless otherwise stated, use 1 heaped teaspoon for all spices.

Ingredients:
Chicken Breasts (2)
Greek Yoghurt (half cup)
Tomatoes (10 cherry)
Onion (1 yellow)
Butter (4 to 5 half sticks unsalted)
Cilantro (1 fresh grocery bunch)
Garam Masala
Cumin
Coriander
Cardamon
Turmeric
Garlic Fresh (4-5 cloves)
Garlic Paste
Ginger Paste
Chili Powder or Paste
Salt

Process:
1) cut white chicken meat (2 breasts) into 1-inch cubes and place into a bowl of Greek yoghurt so it covers the chicken. Add Garam Masala, Cumin, Coriander, Turmeric and a ginger garlic paste. Stir well and set aside for at least 2 hours in refrigerator.
2) melt 2 or 3 sticks of butter in a pan and add onions and fresh cut tomatoes. Add Garam Masala, Cumin, Coriander, Turmeric, Cardamon, Garlic and Salt. Add water and simmer for about a 30 minutes. Here is where you determine the heat profile. Add chili powder or chili paste to suit the taste of your guests. You can also add ginger while the mixture is simmering. And, as this dish is called butter chicken, there is nothing wrong with adding yet another stick or two of butter.
3) remove the sauce from the pan and pour into a food processor. Process until smooth consistency. After it has been processed, we pour the mixture into a strainer and render a smooth sauce, which is the hallmark of a great butter chicken.
4) cook the chicken using your preferred process. Fry, bake or grill until browned. When ready you will add chicken pieces back into the sauce.
5) finally, pour about a half cup of heavy cream into the sauce and add fresh cilantro. Best served in traditional Indian dishes with Naan and/or Basmati Rice.
