Ultra-processed foods are everywhere, but how much of them do we really eat – and how can we know?
A new study from researchers at Imperial College London and UNC Chapel Hill reveals that blood and urine samples can now measure consumption of ultra-processed foods.

This breakthrough uses machine learning to identify metabolic markers of 37 food additives like colorings and emulsifiers – offering a more accurate picture than food diaries or self-reporting. The hope? To improve nutrition research and public health worldwide.
