Your New Favorite Bar: Oatmeal Chocolate Chip Peanut Butter Bars

Oatmeal Chocolate Chip Peanut Butter Bars are chewy and decadent with a Peanut Butter Icing.
1/2 Cup Creamy Peanut Butter
1/2 Cup Softened Butter
1/2 Cup Firmly Packed Light Brown Sugar
1/2 Cup Granulated Sugar
1 Cup, 120 grams, AP Flour
1 Tsp Baking Soda
1/2 Tsp Salt
1 Cup Oats
1 Large Egg, room temp
1-1 1/2 Tsp Vanilla Extract
1 Cup Semi-sweet Chocolate Chips
Peanut Butter Icing Recipe
1/2 Cup Powdered Sugar
2 TBSP Peanut Butter
2 TBSP Milk
Cream butters and sugars. Whisk together flour, soda, salt, and Oats. Add Flour into butter and sugars, along with egg and vanilla. Use a Hand Mixer to mix for about a minute.
Spread into a well-greased 13x9 inch pan. Sprinkle Chocolate Chips over the top.
Bake at 350F for 20-22 minutes or until light brown and a toothpick inserted in center comes out clean. Cool for 10 minutes in the pan. Blend Icing with a hand mixer. Remove bars and drizzle on Peanut Butter Icing. Let completely cool prior to slicing into bars.
