Paw Print Chocolate Chip Ice Cream Sandwiches 🐾

Welcome to birthday season for our household! My kids requested a “dog” theme birthday party this year. My daughter wanted chocolate chip ice cream cookie sandwiches so why not add a cute little paw print to the cookies? To make the paw print we pushed a milk chocolate Hershey’s Kiss and 3 mini chocolate chips into half of the cookies as soon as they came out of the oven. This is a cute unicorn ice cream Grandma found, its cake flavored. Yum! I prefer to freeze the cookies and then add the ice cream. It makes the smashing part easier, and the cookies are less likely to break on you.

Ingredients:
3 cups flour
1 1/4 cups packed brown sugar
1/2 granulated sugar
1 tsp baking soda
1 tsp salt
2 sticks unsalted butter, room temp
2 tsp vanilla extract
2 farm fresh eggs
2 cups chocolate chips

Directions:
*scrape down mixing bowl throughout
1. Cream butter in stand mixer.
2. Once butter is whipped, add in both sugars. Mix.
3. Add vanilla extract and eggs. Mix.
4. Slowly add in flour, baking soda & salt until well combined.
5. Mix in chocolate chips.
6. Freeze dough for 30 minutes.
7. Preheat oven to 350° and line or spray baking sheets.
8. Roll dough into golf ball size balls and place on baking sheets.
9. Bake for 12 mins or until lightly brown on the edges.
