Ingredients:
• 2 shallots
• 2 garlic cloves
• 1/3 stalk of leek
• 1 sprig of thyme
• 3 medium potatoes
• 1 carrot
• 100 g (3.5 oz) processed cheese
• 100 g (3.5 oz) cheddar cheese
• 40 g (1.4 oz) Parmesan cheese
• Olive oil
• Salt and pepper to taste
