Matt Hussey's Breakfast Burger | Blackstone Griddles
Matt Hussey is back on the Blackstone griddle, making a Breakfast Smashed Onion Burger that’s next level. It’s got thin onions, crispy sausage, melty cheese, a swirled egg, and spicy mayo on a toasted English muffin.
Ingredients
½ lb breakfast sausage
1 sweet onion
2 tsp salt
4 slices of cheese (any kind you like)
2 English muffins
¼ cup mayonnaise
1 tbsp hot sauce
2 eggs
2 tsp butter
Directions
1. Set one side of the griddle to low heat and the center to medium-high, then let it preheat while you prepare everything else.
2. Thinly slice the onion using a mandolin and set aside.
3. Roll the sausage into four equal 2 oz balls and keep them nearby.
4. Place the sausage balls on the hot center section of the griddle, leaving enough space between them to spread.
5. Top each sausage ball with a small handful of sliced onions and sprinkle with a bit of salt.
6. Smash the sausage balls into thin patties using a spatula or burger press, pressing firmly and using parchment paper if needed, and cook for 1–2 minutes until the edges are crisp.
7. Flip each patty and immediately top with a slice of cheese, allowing it to melt while the bottom finishes cooking.
8. Add butter to the cooler side of the griddle, crack in the eggs, cook for 2–3 minutes, break the yolks, swirl them slightly, flip, and cook until fully set.
9. Mix the mayonnaise and hot sauce together in a small bowl until smooth and creamy.
10. Toast the English muffins cut side down on the griddle until golden and crisp.
11. Spread the spicy mayo on both muffin halves, then layer on a sausage patty, followed by an egg, and top with the other muffin half.
12. Serve hot and enjoy every bite of your spicy, cheesy breakfast creation!
