Chestnut Puree Dessert Recipe - 3 Ways
Filmed in Mexico like my other videos.
CLASSIC RECIPE
1 - Chestnut Puree Blocks - 1/2 lbs (225g)
2 - Whipped Cream
3 - Candied Cherries - 1 piece
ADVANCED RECIPE
1 - Chestnut Puree Blocks - 1/2 lbs (225g)
2 - Whipped Cream
3 - Powdered Sugar - 1 tbsp (8g)
4 - Candied Cherries - 1 piece
GOURMET RECIPE
1 - Chestnut Puree Blocks - 1 lbs (450g)
2 - Whipped Cream
3 - Whole Chestnuts - 1/2 lbs (225g)
3 - Caster Sugar - 3 tbsp (24g)
4 - Heavy Cream - 1 tbsp (18ml)
5 - Candied Cherries - 1 piece
CLASSIC RECIPE
Prepare your whipped cream
Grate your chestnut puree block into a serving glass
Add a generous amount of whipped cream - 1 to 1 ratio, topped with a cherry
ADVANCED RECIPE
Prepare your whipped cream
Grate a layer of chestnut puree into your serving glass and add a layer of whipped cream, grate more chestnut puree on top, then add one more layer of whipped cream
Create a bowl shape with the whipped cream
One final hill of grated chestnut puree, then sift powdered sugar on the chestnut puree, finally top with a cherry
GOURMET RECIPE
Prepare your whipped cream
Chop your whole chestnuts into small pieces
Put the 3 tbsp of caster sugar into a frying pan, and add the 1 tbsp of heavy cream
When the sugar is melting add HALF of your chopped chestnuts to the pan, mix with the sugar and stir often
When you can't see any more sugar and the whole mixture is brown and candied, you're done
Grate your chestnut puree into a serving glass
Add a layer of chopped chestnuts, then a layer of whipped cream
Add another layer of chopped chestnuts, then a layer of grated chestnut puree
Add a layer of whipped cream, and shape it into a bowl
Add the final layer of chopped chestnuts into your bowl shaped whipped cream
Finally a big hill of grated chestnut puree
Give the top a flat ring shape, do not compress the chestnut puree
Decorate with the candied chopped chestnuts in a ring shape, topped with a cherry
IN ALL CASES YOUR CHESTNUT PUREE BLOCKS SHOULD BE STORED IN THE FREEZER BEFORE GRATING, THEY WILL SOFTEN VERY FAST AT ROOM TEMPERATURE.
