Steak and Eggs-An Easy Way To Enjoy Planned-Overs!

I got used to doing batch cooking when I was working and have maintained that practice as a retiree. I've gotten some questions from folks over the years about what to do with all of the "leftovers". From my perspective, these beautiful food items ought not be considered "leftovers", as if they were somehow less than a dish cooked the same day. This is treasure! Already prepared stuff that's just waiting for you to enjoy at another time.

So, lets get a new term for these items: planned overs!

Today's example of planned-over goodness: steak and eggs.

I had some filet mignon in the fridge after enjoying a meal with my 89 year old mother. My mom enjoys filet a great deal and is an AWESOME cook! But, she's a child of the Depression and doesn't splurge on herself often. So, while she was visiting, I took the opportunity to dry brine some Costco filets, then cook them sous vide and finish on the grill. They were super tasty! And now, there are some planned overs in the fridge. It's time to make some breakfast. And today, that's steak and eggs using the planned over filet, some diced gouda cheese, then topped with some shallot aioli.

The result?
DELISH!
