Curry Garlic Carrot Fries
Makes 2 to 3 servings

* 6 large carrots
* 1 tablespoon extra virgin olive oil
* 1 teaspoon curry
* 1 teaspoon garlic powder
* 1/4 teaspoon Flaky sea salt

Preheat oven to 425°F
Wash and peel each carrot. Slice the carrots into fries (or use a mandolin), then add them to a mixing bowl. Add olive oil, curry, and garlic powder. Mix until the carrot fries are well-coated. Line a baking sheet with Silpat or parchment paper. Add the carrot fries in a single layer. Bake for 20-30 minutes. When the fries are brown, remove them from the oven and immediately sprinkle with flaky sea salt.
