🥔 Mashed Potato Pancakes with Meat Filling (Makes 8–10)
Ingredients
For the Mashed Potato Dough:
2 cups mashed potatoes (leftover or freshly made)

1 egg

3–4 tablespoons flour (add more if needed)

Salt & pepper to taste

For the Meat Filling:
1/2 lb (225g) ground beef or pork (or a mix)

1 small onion, finely chopped

1 garlic clove, minced

1 tablespoon oil

Salt, pepper, and optional spices (paprika, thyme, or parsley)

For Frying:
Oil for pan-frying

Extra flour for dusting

Instructions
1. Prepare the Filling
In a skillet over medium heat, sauté chopped onions in oil until soft (about 3–4 minutes).

Add garlic and ground meat. Cook until browned and no longer pink.

Season with salt, pepper, and any preferred spices.

Remove from heat and let it cool slightly.

2. Make the Dough
In a bowl, mix mashed potatoes, egg, flour, salt, and pepper until a soft, non-sticky dough forms.

If too sticky, add more flour a little at a time.

3. Form the Pancakes
Lightly flour your hands.

Take a golf ball-sized piece of dough, flatten it in your palm.

Add a spoonful of meat filling in the center.

Gently fold and seal the edges around the filling and flatten into a pancake shape.

4. Cook
Heat oil in a nonstick skillet over medium heat.

Fry the pancakes on both sides until golden brown and crispy (about 3–4 minutes per side).

Drain on paper towels.

Serve with sour cream, yogurt, or a simple garlic sauce.

Great with a side salad or pickles.
