Creamy Spinach Chicken Poach: A Comforting Keto Dinner Favourite
This cozy, chicken dish is super easy to make, no fancy skills needed. It's perfect for dinner, especially on chilly nights with family.
Ingredients (Serves 1)

1 cup fresh spinach

1 chicken leg quarter

1 tbsp butter

1.5 cups chicken stock

2 tbsp heavy cream

1 tbsp minced shallots

Salt and pepper, to taste

Procedure

In a pan, melt the butter and add the shallots. Sauté until soft.

Place the chicken leg quarter on top. Season with salt and pepper.

Pour in just enough chicken stock to cover the chicken. Bring to a gentle simmer.

Cover the pan and poach over low heat for 20–25 minutes.

Remove the chicken and set aside.

Let the pan juices reduce to about ¼ cup.

Stir in the spinach and heavy cream. Simmer until slightly thickened.

Return the chicken to the pan and coat with sauce.

Serve hot and enjoy
