Ingredients (Serves 1)

1 tbsp Olive Oil

50g Chicken Breast, diced

1 clove Garlic, crushed

2 tbsp White Onion, diced

1 tbsp Red Bell Pepper, diced

1 tbsp Minced Jalapeños

2 tsp Taco Spice Mix

1.5 cups Chicken Stock

â…“ cup Sugar-Free Tomato Sauce

50g Avocado, diced (for topping)

Fresh Cilantro, chopped (for garnish)

Procedure:

Heat olive oil in a pan over medium heat. Add diced chicken and lightly sear until no longer pink.

Add garlic, onion, bell pepper, and jalapeños. Sauté until soft and fragrant.

Stir in taco seasoning, then pour in the chicken stock and tomato sauce.

Simmer for 10–15 minutes, allowing the flavors to blend.

Serve hot in a bowl, topped with diced avocado and fresh cilantro.
