1.5 tbsp olive oil

100g tofu, cubed

1/2 tbsp yellow curry paste

1/4 cup coconut milk

1/4 cup water

1/4 cup tomatoes, sliced

1 cup spinach

Salt and pepper, to taste
Method

Heat olive oil in a non-stick pan over medium heat.

Add tofu cubes and sauté until golden on all sides.

Stir in yellow curry paste and cook briefly to release aroma.

Add coconut milk and water, mixing well.

Toss in sliced tomatoes and season with salt and pepper.

Add spinach and cook until wilted.
