Ingredients (Serves 1)

1 tbsp olive oil

1/4 onion, diced

2 garlic cloves, chopped

1 cup cauliflower florets

2 cups spinach

1/4 cup coconut milk

1/4 cup water
Salt and pepper, to taste
Method

Heat olive oil in a non-stick pan over medium heat.

Sauté onions and garlic until soft and fragrant.

Add cauliflower and cook until fork-tender.

Stir in spinach, then pour in water and coconut milk.

Simmer briefly, then season with salt and pepper.

Let cool slightly, then blend in a food processor until smooth.

Pour into a bowl and enjoy warm
