Keto Okra Curry
This flavorful okra curry is the perfect keto-friendly dish when you're craving something warm, spiced, and comforting. Packed with fibre, healthy fats, and bold Indian flavours without the carbs Quick to make and perfect with cauliflower rice or enjoyed on its own.
Ingredients
1 tbsp olive oil
½ red onion, thinly sliced
1 tsp curry powder
1 tsp ginger-garlic paste
1 tsp tomato paste
200g okra, cut into 1” pieces
1/2 cup water
Salt, to taste
Method
Heat olive oil in a pan over medium heat.
Add sliced red onions and sauté until soft and translucent.
Stir in ginger-garlic paste and tomato paste. Cook until aromatic.
Sprinkle in the curry powder and roast briefly to unlock flavor.
Add okra and pour in water. Stir well.
Cover and simmer for 7 minutes, or until the okra is tender.
Season with salt to taste and serve hot.
