Looking for a quick and healthy keto breakfast or snack? This keto blueberry and chia pudding is creamy, refreshing, and packed with fiber. It’s made with just a few ingredients and takes only a few minutes to prep then you let it chill and thicken in the fridge.
Ingredients (Serves 1)
3 tbsp chia seeds
½ cup almond milk
¼ cup fresh or frozen blueberries
½ tsp powdered stevia
1 tbsp coconut flakes
Procedure
In a bowl, mix chia seeds and almond milk. Stir well to prevent clumping.
Add powdered stevia and blueberries. Mix again to combine.
Chill for at least 10–15 minutes (or overnight for best texture).
Top with coconut flakes before serving
