Ingredients + Recipe:
Enchilada Suizas

Salsa
10 good sized tomatillos (1.25 lbs)
2 Serrano chilis
2 garlic cloves
1/2 white onion
2 tablespoons lime juice
1 tspn Knorr granulated chicken flavor @knorr
Handful of fresh Cilantro

Place tomatillos and Serrano’s in a pot of water (enough to cover tomatillos) bring to a boil and let boil 5 minutes. Save 1/2 cup of the water from the pot.

Add remaining ingredients to a blender. After you remove husks and stems from tomatillos add them and the chilis to blenders and then add the water. Blend on high about 2 minutes.

Enchiladas
You can either use a rotisserie chicken or make your own. I place 2 large chicken breasts in a crock pot with, onion, juice of an orange and lemon or lime, salt, pepper, garlic clove, teaspoon ground cumin and 1/2 cup chicken broth and cook on high 3 hours. Shred when done.

Add 1/4 cup mexican Crema or sour cream and 1/2 cup heavy cream to 1 cup of salsa.

Prepare enchiladas by lightly dipping them in salsa, add 2 tablespoons chicken, roll and repeat. Once enchiladas are rolled and in pan, (9x13) top generously with cream/salsa mixture, top with shredded cheese (I use Mexican blend @KraftSingles @kraftmacncheese @cookingselections8775 @myfoodandfamily ) and bake on 350’ for 30 minutes.
