Ingredients:
* 1 large head of garlic
* 2-3 medium shallots, unpeeled
* 1/2 cup (1 stick) unsalted butter, softened
* 1/4 cup extra virgin olive oil
* 1/4 cup fresh parsley, finely chopped
* 1 tablespoon fresh rosemary, finely chopped (optional)
* 1/2 teaspoon salt, or to taste
* 1/4 teaspoon black pepper, or to taste
* 1 long loaf of crusty bread (such as baguette or Italian loaf), halved lengthwise

Instructions:
1. Roast the Garlic and Shallots:
* Preheat your oven to 400°F (200°C).
* For the garlic: Slice off the top quarter of the garlic head to expose the cloves. Place the garlic head on a piece of aluminum foil. Drizzle with 1 tablespoon of olive oil and wrap the foil tightly around it.
* For the shallots: Place the unpeeled shallots on the same baking sheet, leaving them unwrapped.
