You've Never Had Egg Salad Like This – Spam Twist!

It’s “fend for yourself and sandwich season” here at Hamilton Homestead - because the greenhouse is calling and the garden grows, so I’m stepping away from the stove.

But before I trade my apron for a trowel, I had to make a batch of Mom’s Egg Salad - a creamy, nostalgic recipe that’s simple, satisfying, and surprisingly versatile. Spoiler alert: it includes Spam. Yes, Spam. And yes, it’s delicious. This quick video is equal parts memory and a wink to anyone trying to feed their family (or themselves) during the busy seasons. It’s not fancy - it’s real food, real simple, and real good.

Sandwich season is ON.

The Ingredients:
• 8 Hard-Boiled Eggs, grated
• 6 oz. Spam, grated
• 2 Tbsp dill pickle relish or grated dill pickle
• ½ cup minced green onion or sweet onion
• 2 Tbsp minced fresh parsley or 2 tsp dried parsley
• ½ cup mayonnaise
• 1 Tbsp yellow mustard
• And LOTS of black pepper—though you might want to start slow and season to taste.

Mix it all together, give it a taste, and adjust the seasoning the way you like it. You might want more mustard, maybe less pepper - totally up to you. It’ll keep in the fridge for 5 to 6 days, and makes a fantastic sandwich… or just scoop it up with crackers. Easy, filling, and delicious.
