DEEP DISH DETROIT STYLE PIZZA

This recipe if good for one 9x13 size pan.
Bake 550° for 4 to 6 minutes.
Check on it as ovens can vary. Bake another 4 minutes after adding second cheese layer. Watch as ovens do vary so as not to burn.
Dough Ingredients:
300 g Bread Flour
225 ml water
7.5 g olive oil
6 g salt
1.5 g dry active yeast
3 g Diastatic Malt powder * The Secret Ingredient :-) (1% of flour weight).

Toppings
1/4 Red Onion slices wafer thin and several sprigs of fresh oregano.
5 blanched garlic cloves to mix with Olive oil to baste dough. Salt and pepper to taste.
8 oz Monterey Jack Cheese (shredded)
8 oz Muenster Cheese (shredded)
Pecorino or Parmesan Cheese to taste (shredded)
Your favorite pizza sauce on top (striped) with balsamic vinegar drizzle.
